THEY say that behind every great man is a strong woman; City of Greater Shepparton Mayor, Geoff Dobson is one of the first to admit it.
Cr Dobson says that his wife Prue, is not only the force behind him but that she can ‘match it with anyone in the culinary stakes’.
Henceforth, when asked to take-part in Recipes this week, Geoff threw the reigns straight to Prue who kindly shared one of her classic dishes- Slow-cooked Lamb Shank Pasta.
Prue says the recipe can be cooked at home or in the hot coals of a camp fire.
2 lamb shanks
½ brown onion, diced
1 carrot, diced
1 celery stick, diced
2 cloves garlic
2 cups Sugo (Italian pasta sauce)
500ml chicken stock
2 sprigs thyme
2 bay leaves
400g broad fettuccine
Heat olive oil in Dutch Oven pot or camp oven and season with salt and pepper.
Brown lamb shanks on all sides, remove from pot.
Add onion, carrot, celery and garlic to pot and cook until soft.
Add Sugo, chicken stock, thyme and bay leaves and bring to the boil.
Add shanks, cover and cook in a moderate oven for 2 – 2.5 hours or 1.5 hours in camp oven.
Remove shanks from pot and shred meat from the bone. Also discard thyme and bay leaves from pot.
Return meat to sauce and keep warm.
Meanwhile cook fettuccine, drain and toss through meat sauce.
Serve with chopped parsley.
