
RUNNING a pub was thought of as ‘man’s work’, particularly a rural pub in a small town like Rochester.
Olivia James bought and refurbished the historic 1870s-built Commercial Hotel, now known as the Rochester Tavern, in 2019. She bought the tavern because she wanted to be her own boss and to improve outcomes for herself and other women in hospitality.
“Hospitality is a fantastic industry to be in. If you do it well, you can go so far and travel as much as you like,” said Olivia.
Since starting out in hospitality at age 17, working at the famous Glenferrie Hotel, Olivia has seen and experienced some of the hardships women face in a male dominated industry.
By providing stellar service and looking after clientele, who look after her and the team, Olivia has created a welcoming environment to train and support her all-female staff on the floor and in the kitchen, led by an Italian head chef.
