Cauliflower bacon ‘mac’ and cheese

Skip the carbs and try this baked dish with cauliflower instead of pasta
Serves: 6-8 | Prep: 15 minutes | Cooking: 50 minutes

INGREDIENTS

  • Whole head of cauliflower
  • 1 onion
  • 1 clove garlic
  • 300ml carton pouring cream
  • 1 cup milk
  • Pinch of ground nutmeg
  • Teaspoon wholegrain mustard
  • 1/3 cup flour
  • 250 grams bacon (diced)
  • 200 grams butter
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg

METHOD
Step 1 In a large pot, bring chopped cauliflower to boil with a teaspoon of salt. Drain and set aside.
Step 2 Using same pot or a deep sauce pan, use small amount of butter to fry onion, crushed garlic and bacon. Remove and set aside.
Step 3 In a large sauce pan or same pot melt butter on low heat. Add flour and cook for 1 minute.
Step 4 To cooked flour mixture, add milk, cream, nutmeg, salt, and pepper. Let simmer on medium heat for 10 to 15 minutes while stirring. If sauce thickens too much does not matter for this recipe.
Step 5 Add onion, garlic and bacon mixture to sauce and stir through. Add in cup of shredded cheese and stir through.
Step 6 Add in cauliflower and combine well then transfer to baking dish. Cover with remaining shredded cheese.
Step 7 Bake in oven for 45 minutes at 150 C or until top is golden.
